Why does Raw Honey crystallize?

RAW Honey means it comes straight from the hive, gravity fed through a strainer to remove the honeycombs, beeswax and larger particles of natural debris. When Raw honey becomes cloudy it is not going bad . It is crystallizing. Raw honey is not filtered. Filtered honey goes through a process where it is heated and rapidly cooled. This prevents from crystalizing, but the heat also kills most of the enzymes, vitamins, minerals, and amino acids and the filtering removes most of the pollen.


Honey is a super-saturated solution consisting of mainly 2 sugars: Glucose and Fructose. Crystallization naturally happens when glucose, one of the main sugars in honey separates out of the super-saturated solution and takes the form of tiny little crystals. The crystals form a framework which holds the other elements of honey in a suspension, creating semi-hard state.
